KU Dining Services
KU Dining Services, a division of KU Memorial Unions, is taking steps towards a more sustainable dining experience on campus. From recycling and waste reduction to providing local & healthy menu options, KU Dining Services is working towards reducing KU's impact on the environment.
Current and planned efforts at KU Dining Services include:
- All units of Dining Services recycle cardboard, with over 3 tons (6240 lbs) of cardboard recovered in a regular business week. Some units have also started to recycle HDPE plastic bottles and/or steel cans
- All locations use recycled content napkins and some place them in dispensers to discourage excessive use resulting in waste.
- Take-out bags are 100 percent recyclable and made with more than 25 percent Post-Consumer Recycled content. The bags are printed with water-based inks and the manufacturer has received food safety and social accountability certifications.
- A partnership with Local Burger provides locally-made vegan burgers at The Market
- Better Bites offers students healthier options at campus dining locations and convenience stores.
- Waste cooking oil is provided to the biodiesel generation project which will eventually produce fuel for campus equipment.
- Dishwashing machines in two dining locations recirculate during the wash cycle to conserve water. Future dishwasher purchases will all have recirculation capabilities.
- Utilizing ready-to-use food products cuts down on water use and waste on site.
- KU Dining services is also pursuing opportunities to purchase organic foods and participate in farm-to-market programs to bring local fruit to dining locations
